Spicy Queso Dip

Ingredients
1 small onion, diced
1 tablespoon oil
1 garlic clove, minced
1 (16-oz.) package pepper Jack pasteurized prepared cheese product, cubed
1 (10-oz.) can diced tomatoes and green chiles
2 tablespoons chopped fresh cilantro

Preparation
1. Cook onion in hot oil in a large nonstick skillet over medium-high heat 8 minutes or until tender. Add garlic, and cook 1 minute. Remove from heat.
2. Combine cheese, tomatoes, and onion mixture in a large microwave-safe glass bowl. Microwave at HIGH 5 minutes, stirring every 2 1/2 minutes. Stir in cilantro.
Serve with tortilla chips.

Spicy Ranch

-1 clove garlic
-1 1/2 teaspoons kosher salt, divided
-1 cup sour cream
-1/4 cup buttermilk
-1/4 cup loose packed fresh Italian flat-leaf parsley
-1 tablespoon fresh lime juice
-1 teaspoon fresh cracked black pepper
-1 teaspoon dried dill
-1 teaspoon dehydrated onion flakes
-2 drops Worcestershire sauce
-Pinch cayenne pepper
-Pinch ground white pepper

Directions

  • Mince the garlic and then add 1/2 teaspoon kosher salt and mash with the edge of the knife until a paste is formed.
  • Add this to a blender with the remaining ingredients. Puree and taste to adjust seasoning.
  • Remove and place in a small bowl and refrigerate for 1 hour.
